Am I crazy or does it feel like we just removed the last shiny ornament from the tree?
Yet next week is Easter. Already.
A fact that had Jeff and I hopping around town on Saturday running from store to store on behalf of an errant bunny. And while I deeply appreciate the fact that my oldest child is willing and able to stay home babysitting, something about paying her the big bucks just so that I can go out and buy bling for her basket doesn’t seem quite right.
Moving right along though…
So with the basket goodies bought and stowed I’m nearly ready for Easter. All that’s left to do now is hide the eggs and plan the menu.
And so what if my mind wandered to possible Easter meal ideas today during the pastor’s sermon. At least I was thinking on topic.
Which brings me to my point. And yes, I do have one.
More of a confession really: I’m not a traditionalist when it comes to holiday meals.
While you may be feasting on ham and scalloped potatoes come Easter Sunday, my family will likely be enjoying something from the grill.
On Christmas, we skip the turkey dinner in favor of Mexican. Usually enchiladas.
You won’t find us eating corned beef on St. Patty’s day either.
I will admit to being sort f sentimental about Halloween food though. I’ve been known to whip up a big ‘ol pot of stick-to-yer-bones chili. In spite of the fact that our Arizona temps rarely dip below 70 for the Trick-or-Treating hour.
For Easter this year I’m thinking Migas and French toast casserole with grilled veggie kabobs. Add a bowl of strawberries and honeydew alongside this DELICIOUS (and so very easy) fruit dip and we’re set.
And in spite of all the sugar that I fully intend to include in brunch itself, I think I’ll top it off with dessert. Tell me THESE don’t look scrumptious. Go ahead. Tell me.
So. What will you be eating once you’ve devoured the deviled eggs?

Those look fantastic! I need to start thinking about our meal. Up until a few years ago there was always a big family get together on Easter, so I didn’t have to cook. The food was usually pretty traditional. I’m thinking maybe crawfish for us this year.
Wow! Actually, I am very traditional when it comes to holiday dinners…I love ham for dinner, turkey for Thanksgiving, both for Christmas, and pork on New Years. Hmmm…perhaps I’ll get brave one year and break the mold…probably not.
Oh my. Well, I am as traditional as it gets with the meals. I’ll be dining at my mom & dad’s for easter this year, though, so I’m not in control. But she is rather traditional, herself, when it comes to the meal planning.

This will be our first Easter in a long time when we are by ourselves without a plethora of cousins. Dang.
I think I’ll try the migas, too, along with that french toast casserole that PW made last week with Stacy’s Naked Pita Chips. And just a suggestion for your brunch, since you’re barbequing veggies anyhow, toss some asparagus spears in olive oil and finely chopped garlic and throw those on as well, sprinkle with some kosher salt and a little pepper before serving. Trust me. Awesome.

I’m definitely a traditionalist for Easter and Thanksgiving. Not so much for Christmas though. We like tamales for Christmas.
I am now starving, with three hours of work to go. THANKS JERK.;)
We are pretty traditional.. my husband cooks a ham and does a leg of lamb on the grill, plus we have deviled eggs, strawberry shortcake, hawaiian bread and spinach dip. However, I’m thinking that french toast casserole needs to be worked in somehow!
I don’t cook the Easter meal. Or any holiday meal, for that matter. I’ll take Big Mama’s Mississippi Sin dip and some kind of decadent dessert to our family gathering. If I was in charge though, we would have some kind of barbecue. Smoked pork shoulder maybe. But I’m not in charge.
Unfortunately I can’t tell you how scrumptious they look because I can not see the photo for some reason, weird. I had to look up Migas! I don’t have anything planned. We will probably grill.

Sounds yummy!! We’re just gonna make it easy and roast a turkey. The kids will be full on candy anyway!
I am a semi traditionalist…. The problem is I live in a completely traditional family. With my husbands family making an easter dinner on saturday, however, I may forego the ham completely.

So – what are your Easter “traditions”? Our girls are still very young so we haven’t really created any just yet…
oooo…I love migas! I never add that much veggies to it though…guess that is next on my list (especially since hubby just said we needed to have migas again…um, now please)
We usually don’t have much of a choice for Easter since my SIL and MIL do most of it, but I usually sneak in something I like too…but this will make a perfect Easter brunch.

And, we had brisket and ribs for Good Friday..I sat and said this to my mom, and she said, “oh well!”
Ok..so I am getting further and further from tradition on some Holidays… I still like the Turkey on Thanksgiving, but we are discussing Smoked brisket for Xmas this year!! We took the ham a little bit away from tradition this year by having sandwhiches, veggie trays, chips and dip and mac salad on Easter….I thought it rocked..oh and don’t forget the Angel Food cake with strawberries and cool whip for dessert!!

Let me just tell you..in Tunica MS they have a Paula Deen buffet at the Harrah’s casino..I have eaten there…they had the french toast casserole minus the praline topping….can. you. say. yum? I got the same recipe you linked and left the topping off and added syrup before baking….sinful I tell you!!!
