I discovered a new lunch superstar this week.  Superstar because not only is it a hit with me, but also with all of the kids – and that, let me assure you, is no small feat.

It’s a wrap, which means it’s as easy to throw together as peanut butter and jelly.  And it has hummus, and avocado, and feta–which means it is seriously delicious.

Here’s what you need:
- tortillas (I prefer the whole wheat ones from Trader Joe’s).
- deli turkey
- Feta
- lettuce
- hummus (I prefer the edamame hummus, also from Trader Joe’s).
- avocado

Here’s what you do:
- Warm the tortilla in the microwave for a few seconds so that it won’t split when you wrap it.
- Spread some hummus all over it.
- Layer with turkey, sliced avocado, Feta, and lettuce.
- Roll it up.  Enjoy.
- Come back and leave me a comment telling me how delicious it was.

Sounds delicious. I actually bought some turkey and spinach today for making wraps. Adding avocado and hummus would be tasty. And I had never heard the microwave trick. Thanks!

It LOOKS delicious! Maybe we should plan a lunch get-together so you can..ahem…”show me” how to make them. :)

Also: I just had the best wrap at Jason’s Deli in Chandler. Have you been there? I like it.

Love it! I am also delighted to find another lover of Trader Joe’s.

Seriously, what’s not to like? Organic. Healthy. Cheap. Tons of samples. Friendly staff.

OK, I have one complaint. I wish their food came in larger quantities. And with double the amount of kids I have, I’m sure you would agree.

But I still heart my Trader Joe’s.

Oh, I miss Trader Joe’s so much!!

We’ve been eating a similar wrap lately too. Whole wheat tortillas from Sam’s Club, mash an avocado with a little italian dressing, alfalfa sprouts, tomatoes, sliced turkey and swiss cheese. Sometimes I add a little crumbled bacon. Healthy, delicious, and portable!

I must say that is one fancy picture. Very nice. However. I’ll have mine with tortilla, turkey, lettuce, and mayo. =) (Oh, and as far as I know there is no Trader Joes in WV, either!)

That does sound ridiculously delicious. I always have the worst luck picking avacados though.
